Ukrainian Recipes: Krupnyk (Barley Soup)
This recipe is by Maria Swynar, from "Raising the Roof", a fundraising cookbook for 2001 from St. George the Great Martyr Ukrainian Catholic Church in Oshawa, Ontario.
- Wash pearl barley; cook in large amount of slightly salted boiling water until tender. - Meanwhile, cook onion in butter until slightly wilted. Add vegetables, mushrooms and soup stock. Simmer until vegetables are done. - Strain cooked barley and add to soup. Stir in sour cream and bring to a boil. Season to taste with salt and pepper. - Garnish with dill. |
